When I Was A “Vegetarian”

I don't know if I fit the exact term of vegetarian but it's easier than trying to figure out what I was. All I know is I went like a year or something without any meat. This wasn't for a diet or even for a cause, this was after reading The Jungle in high school. I went off to college just being done with meat. Since I never really liked fish at the time I wasn't eating that either.

It suited me as I went off to live in the dorms and go to the cafeteria to eat my daily meals. I didn't trust their meat, it just made me nervous, so it was hard to not eat any. On the other hand I knew nothing about getting nutrition without the protein from meat so I lived off of french fries, pizza and the occasional salad.

As you can guess, this was how I gained my freshman 15 (and more) but I was clueless, I had no idea I was eating that badly. Nobody ever told me as I was growing up how important protein was, I learned that much later on.

I went off to college the smallest size I've ever been, a size 4. I can hardly believe it now, it doesn't seem like that was real. I was however really sick back then but that's another story entirely.

I'm still not a big meat fan. I enjoy chicken but I don't salivate over it. I rarely eat red meat and probably eat more fish now than I ever have because of my husband. My husband chooses not to eat any beef or poultry but does eat a lot of fish.

I've learned so much about eating healthy because of him. I now enjoy beans, artichokes, brussel sprouts and more ethnic foods. This has broadened my horizons so much, I have more options to eat better now. I just have to look for more recipes and actually cook more often. Oh yeah, the lazy thing always gets in the way.

    I’m impressed your husband has taught you so much about healthy eating! MY husband would eat meat and potatoes for every meal if he could….

    I don’t like meat either. I like fish, especially raw, and sort of like turkey, and the rest of it I’ll eat if there’s nothing better. But I don’t trust it at most restaurants, and the only red meat I really LIKE is bacon and pepperoni, neither anywhere near healthy.

    @julie, I’m really picky about the meat I like to have, that’s my main problem. I hate skin, I hate fat and I have texture issues. So it’s not easy for me to find meat I actually like and if I do I tend to pick it apart. I’m so weird =)

  4. Now it’s showing up! I don’t know what that was all about. We cut out red meat and pork years ago. We do vegetarian meals about 4 days a week, and chicken the other 3.

    I wish I liked seafood, but just don’t care for it. I keep trying it though! Love your blog!

    It’s amazing how people think they could never live without it meat! I say, you don’t have to live without it, but eat less of it. We’re down to once or twice a week (and then it’s usually fish anyway). I honestly believe that changing our eating habits is a process…

    @Hanlie, I think I mix it up well enough, I’d like to eat more veggie meals as I love them so much, just need to find recipes.
