My Healthy Side

I have a naturally healthy side despite my obsession with breads, cereals and sugar. No really, I swear.

I love vegetables, I always have. My mother never had to force me to eat my broccoli or carrots, I love them just as they are. No need for butter or cheese, just a pinch of salt. I learned as an adult I also love spinach and brussel sprouts, who knew? I'm generally too lazy to make them but I should make them more often. We try to keep lots of frozen vegetables in our freezer. My mother did however have to nag me to eat meatloaf. Yuck.

I rarely eat fast food. If I do it's usually a bagel w/cream cheese at Dunkin Donuts or it's a hamburger at Wendys. I've never been a very big fan of fast food and have avoided it for a big portion of my life. I generally hate McDonalds, Big Size Me kind of solidified my feelings. I have only eaten at Taco Bell twice in my life and I don't like it, that's not Mexican food.

I only have a soda like once a month if that, most of the time I forget about it. I decided one day to stop drinking it and it just kind of fell off my radar. I am not a fan of diet soda so it's generally no soda for me. Sometimes I like to mix a little orange juice with seltzer for some fun but not very often.

I've never used cream in my coffee, only ever milk. I used to only use skim milk until I met my husband who was used to whole milk so we compromised and now have 2%.

Erik McMuffin

One of my favorite breakfasts to eat in the morning is my Erik McMuffin and it actually has kind of a sweet story behind it.

When my husband Erik and I were first living together years ago he would get up with me in the morning to make me breakfast. He started making me english muffins with egg and cheese just about every morning. After that he'd take me to the train, which was only a few minute walk away but he liked to say goodbye to me at the train. It was something special we did, everyday, and it made having to travel so far by train for work more enjoyable.

It's nearly 7 years later and he still gets up in the morning to make me these. Although now they are whole wheat english muffins, the cheese is usually lowfat and sometimes it's egg whites not a whole egg. I still love these, it's delicious, easy to eat while driving to work and it's probably one of the healthiest things I eat since it's a good balance of carbs, protein and fat.

I love that not only are my Erik McMuffins full of healthy stuff but full of love too <3

Sugar Options

Sugar and I are not friends, not at all. Yes, I keep going back but I always regret it. If I could find a way to cut out 90% of the sugar from my life I know this would make living so much better. When I eat something saturated in sugar, like a pastry or a piece of cake or candy, I get very sick. I get lightheaded and dizzy and often pass out.  When I wake up after having passed out I have a hangover. I usually have to eat something immediately, which only makes me feel worse. I have a similar reaction to too many starches like pasta or cereal. This is something I've gotten a lot of control over. I don't eat nearly as much sugar and white flour as I used to. I now prefer wheat bread over white. I now actually am not much of a fan of cake, I think all the times the frosting has litterally gone to my head eventually turned me off almost entirely. I use a lot less sugar in my coffee than I used to. I'd say for an average coffee cup I used to put in 4 sugars. I sometimes use Splenda but I'm not that big of a fan, I'm trying to just use less and less regular sugar until I need barely any at all. I love adding flavor to my coffee. I am however trying to find alternatives to sugar, other than fake sugar. I have found often plain fruit is sweet enough for me, I love adding raspberries to just about everything. So what else do you use to add a little bit of sweet to something?
